The school year is rolling, and there are so many factors that can affect a child’s performance in school. At age 17, they demonstrated a 51% increase in violent and antisocial behavior. The food they were eating and the nutrients they were missing out on each day were critical factors. According to a study conducted by the University of Southern California, poor nutrition in the early years leads to low IQ and antisocial behavior that may continue into later life.

Healthier & Homemade Chicken Tenders


INGREDIENTS

• 1 cup Eniva Heart Healthy Cooking Oil

• 1.5 lbs chicken tenders

• 4 cups crushed Rice Krispies or Corn Flakes

• 1 Tbsp garlic salt

• 1 tsp paprika

• 1/4 tsp pepper

DIRECTIONS

Preheat oven to 400°F.

In a small bowl, mix together spices and set aside. Pour Cooking Oil into one bowl, and then on a plate or counter top, spread out rice Krispies or Corn Flakes.

Dip each chicken piece in the cooking oil and then roll in cereal. Sprinkle with spice mixture, then place on cooking tray covered in aluminum foil.

After all pieces are placed on tray, cover chicken with another layer of foil and bake in oven for 30 minutes. Check for doneness, add time for desired crispiness.  Serve with your favorite salad or vegetables


TEEN Energy Jigglers

INGREDIENTS

DIRECTIONS

Bring water to a boil and add cherry Jell-O. Remove from heat, and stir in UltraShot. Pour into ice cube trays, and refrigerate until firm. Energy-full treats the kids will love!


Graham Cracker VIBE Dessert

INGREDIENTS

  • 1 oz Eniva VIBE Kids
  • Graham crackers (regular)
  • 1 pkg (4 oz) instant vanilla pudding
  • 1 1/2 cup milk
  • 4 oz whipped cream (heavy whipping cream)

DIRECTIONS

Using an 8×8 pan, place graham crackers at the bottom, cutting them as necessary to fit in a single layer. In a medium mixing bowl, mix pudding mix, milk and VIBE and let sit for 5 minutes. 

Pour 4 oz of cream into a cold metal bowl. With electric mixer, beat on highest setting until stiff peaks appear.

Add whipped cream to pudding mixture and stir together. Pour half the pudding mixture over the crackers.

Proceed to place another layer of graham crackers, with the remaining half of pudding mixture on top. Finally, place a 3rd layer of graham crackers on top.

On top, you can add any toppings you would like: more whipped cream, melted chocolate or cherry pie filling to name a few.

Note: You can add bananas on top of each pudding layer for more texture. Refrigerate for at least 6 hours or overnight. Cut and serve!
